"As a child, I loved baking and was always around my grandparents in the bakery. Baking has been in my genes, and I have always wanted to carry on the legacy started by my great grandmother 90 years ago. I am the 4th generation in the business, a certified pastry chef from Le Cordon Bleu London. My initiation into the bakery was sheer baptism by fire. The expectations were very high. I had to balance the traditional products the bakery offered to clients at pricing, which was sheer value for money for 90 years, and the Niche products I introduced. I was overwhelmed with the response I received. I have taught the choux pastry, French macarons, Cheesecake, doughnuts, and tarts. We specialise in customised special occasion cakes. The biggest challenge we faced was the imposed lockdown due to the pandemic, which affected our business. We had grown the company to the level that covered a lot of corporates and institutions, and with them being shut, our bulk orders had come to a halt. The first 2-to 3 days were a nightmare, but by God’s grace and the goodwill we had built stood us in good stead. After obtaining the necessary permission, we started delivering bread and confectionery products across the city of Kolkata. The word spread around, and we reached out to many more retail customers than we had ever before. There was a total paradigm shift in our business strategy from March 2020.People worldwide reached out to celebrate occasions with their near and dear ones with Saldanha’s goodies, and we delivered them to them at their doorstep. Our biggest challenge turned out to be our biggest blessing. My message is- Be passionate in everything you do. Quality is the result of dedicated effort and the best business plan. Continuous learning, innovation and keeping up with the latest developments will always help your business to be successful."
